Jack isn’t entirely sure exactly when Nani plans to join him, so he leaves the water for now, instead preparing the filter with what he’s found is the amount of coffee most people seem to enjoy.
He’s found through experience that his own preference is a little too strong for most people, and so he makes sure to keep in mind he’s not drinking his coffee alone. He’s not quite up to Ianto’s standards, but he knows he’s not half bad either. And since he’s managed to get hold of coffee, he’s not as rusty as he had been before arriving in Discedo.
